So, can you use a straight bar snaffle as part of a double combination? So essentially having 2 straight bits in the mouth?

I know people who use a cambridge mouth snaffle (sometimes called a magic bit) alongside a weymouth. If your horse is normally ridden in a straightbar snaffle and is happier in it than with a jointed bit then I would use it as part of a double combination. Whatever suits your horse.
