Can someone please enlighten me as to the different effect/result a Wilkie bit has on a pony as opposed to a hanging cheek snaffle (boucher bit). Many thanks

I'll have a go!!! In both cases the cheek piece is "fixed" to the upper part of the bit ring so both bits will act on the poll. However, a wilkie will apply more pressure to the poll because the rein is fixed onto the lower part of the bit. The rein will have more freedom to move on the hanging cheek, so less pressure will be applied to the poll. Hope this makes sense!
